I'm not aware of any local services you could run to host a proxy
yourself..it might be out there somewhere :)

I'm searching for an alternative to pygopherd's web server part so that I could serve the gopher content via a web frontend.
Hmm, so I might want to use pygopherd although it seems to be inactive
since Jan 2020...
But I found an active fork which seems to is a Python3 version:
