I'm dubious, the only thing I see us doing better in an office

I agree. The new model you explained with the shared desks sounds a little counter-intuitive to what is going on right now, even with the disinfecting at the beginning and end of each shift.
That is always nice. I bring my lunch to work, when we were "at work," and always tried to sit outside to have lunch.
